My Favorite Banana Bread

I saw this recipe in a newsletter from USA Triathlon. It’s from Laurel Wassner at Athlete Food. I’ve made it a bunch of times - it’s my go-to recipe for using up brown bananas or extra carrots. It’s really tasty!

Ingredients:

1 tablespoon unsalted butter, melted

3 medium carrots, peeled

1 1/4 cups flour (white or whole wheat)

1 1/2 teaspoons baking powder

1 1/2 teaspoons baking soda

1/4 teaspoon kosher salt

Fat Bike

I had my first Fat Bike experience at the Shindagin Shindig Demo Days back in August 2015. Shindagin Shindig a super fun event at a local forest/mountain bike hotspot. Bike dealers bring a bunch of brand new (mostly mountain) bikes for people to try out for free! You basically fill out a form, give them some ID, and then take a bike out on the trails for 30-60 minutes.

I decided to start a blog after realizing that I spend a significant amount of time sending e-mails and re-telling stories to friends who have moved away from where I live. Instead of typing out multiple emails to different friends updating them on my life, race recaps,thoughts,  etc...I will try writing about them here.
